Turkish-Style Bean Salad with Lombardi Peppers
A protein-rich salad with white beans and tangy CEREN Lombardi Pepper Pickles.
Ingredients
- 1 ½ cups CEREN Canned Beans (white beans), drained and rinsed
- ½ cup CEREN Lombardi Pepper Pickles, sliced
- 1 tomato, chopped
- ½ onion, thinly sliced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon sumac
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
Combine base: In a bowl, mix beans, tomato, onion, and CEREN Lombardi Pepper Pickles.
Make dressing: Whisk olive oil, lemon juice, sumac, salt, and pepper.
Toss: Pour dressing over salad and mix well.
Serve: Garnish with parsley. Traditionally enjoyed with grilled meats or as a light vegetarian meal.
