Turkish Red Kidney Bean Salad
A light, refreshing, and traditional Turkish meze with CEREN Canned Red Kidney Beans.
Ingredients
- 2 cups CEREN Canned Red Kidney Beans (drained and rinsed)
- 1 small red onion, finely chopped
- ½ cucumber, diced
- 1 tomato, diced
- 2 tablespoons olive oil
- Juice of ½ lemon
- 1 tablespoon fresh parsley, chopped
- Salt and black pepper, to taste
- Instructions
Prepare beans: Rinse and drain CEREN Canned Red Kidney Beans. Place in a bowl.
Mix vegetables: Add onion, cucumber, and tomato to the beans.
Dress: In a small bowl, whisk olive oil, lemon juice, salt, and pepper. Pour over salad and toss well.
Serve: Garnish with parsley. Chill for 30 minutes before serving as a meze or side dish.
