Turkish Menemen (Tomato & Egg Scramble)
A beloved Turkish breakfast dish where CEREN Tomato Paste enhances the flavor of fresh tomatoes.
Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 green peppers, chopped
- 2 medium tomatoes, diced
- 1 tablespoon CEREN Tomato Paste
- 3 eggs
- ½ teaspoon red pepper flakes
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
Cook vegetables: Heat olive oil in a skillet. Add onion and green peppers, sauté until softened.
Add tomatoes & paste: Stir in diced tomatoes and CEREN Tomato Paste. Cook for 5–6 minutes until thickened.
Add eggs: Crack eggs directly into the pan. Stir gently to scramble with the tomato mixture.
Season: Add salt, pepper, and red pepper flakes.
Serve: Garnish with parsley and serve hot with fresh bread.
