Turkish Bulgur Pilaf with Peperoni Pickles & Herbs
Inspiration: Classic Turkish bulgur pilavı gets a twist with crunchy, mildly spicy peperoni pickles stirred in at the end — adding freshness and zing.
Ingredients
- 1 cup CEREN Bulgur for Pilaf
- 2 tablespoons CEREN Extra Virgin Olive Oil
- 1 onion, finely chopped
- 1 tablespoon CEREN Tomato Paste
- 1 ½ cups vegetable broth
- ½ cup CEREN Mildly Spicy Peperoni Pickles, chopped
- 2 tablespoons fresh parsley, chopped
- Salt & pepper, to taste
Instructions
Build base: Heat olive oil in a pot, sauté onion until golden. Stir in tomato paste and cook 1 minute.
Cook bulgur: Add bulgur, stir to coat. Pour in broth, season with salt and pepper. Cover and cook on low heat 15 minutes.
Finish: Once bulgur is fluffy, stir in chopped CEREN Mildly Spicy Peperoni Pickles and parsley.
Serve: As a side dish to grilled chicken, kebabs, or roasted vegetables.
