Turkish Bean Pilaki
A classic Turkish olive oil dish made with CEREN Boiled Beans, vegetables, and herbs.
Ingredients
- 2 cups CEREN Boiled Beans (drained)
- 1 onion, chopped
- 2 carrots, diced
- 1 potato, diced
- 2 tablespoons CEREN Tomato Paste
- 3 tablespoons olive oil
- 2 cups hot water
- Juice of ½ lemon
- ½ teaspoon sugar
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
Sauté base: Heat olive oil in a pot. Add onion, cook until softened. Stir in carrots and potatoes.
Add tomato paste: Mix in CEREN Tomato Paste, cook 2 minutes.
Simmer beans: Add CEREN Boiled Beans, hot water, lemon juice, sugar, salt, and pepper. Simmer gently for 20–25 minutes until vegetables are tender.
Serve: Let cool to room temperature. Garnish with fresh parsley. Traditionally served cold as a meze.
