Traditional Red Lentil Soup
A comforting and authentic Turkish soup made with CEREN’s quality ingredients.
Ingredients
- 1 cup CEREN Red Lentils
- 1 medium onion, finely chopped
- 1 medium carrot, diced
- 1 medium potato, diced
- 1 tablespoon CEREN Tomato Paste
- 2 tablespoons olive oil or butter
- 1 teaspoon paprika (optional)
- 6 cups hot water or vegetable stock
- Salt, to taste
- Black pepper, to taste
- Juice of half a lemon (to serve)
Instructions
- Prepare the base: Heat olive oil or butter in a large pot. Add the onion and sauté until translucent.
- Add vegetables and paste: Stir in the carrot, potato, and CEREN Tomato Paste. Cook for 2–3 minutes.
- Add lentils: Rinse the CEREN Red Lentils thoroughly, then add them to the pot. Mix well.
- Simmer: Pour in the hot water or stock. Season with salt, black pepper, and paprika if desired.
- Cook: Bring to a boil, then reduce heat and let simmer for 25–30 minutes until lentils and vegetables are soft.
- Blend (optional): For a smooth texture, use a hand blender to puree the soup.
- Serve: Ladle into bowls, drizzle with lemon juice, and enjoy with warm bread.
Serving Suggestion
Traditionally, this soup is served with a squeeze of lemon and sometimes topped with a drizzle of melted butter flavored with paprika.
