Spicy Turnip Juice Gazpacho (Andalusian Cold Soup Twist)
Gazpacho, the famous cold soup of Spanish cuisine, is adapted this time with CEREN Spicy Turnip Juice. The turnip juice, combined with tomatoes and vegetables, adds extra depth and a spicy touch.
Ingredients
- 2 cups CEREN Spicy Turnip Juice (chilled)
- 4 ripe tomatoes, peeled and chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 clove garlic
- ½ red onion, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar (optional, taste before adding)
- Salt and black pepper, to taste
- Ice cubes (for extra chill)
For garnish:
- Croutons
- Diced cucumber
- Chopped fresh herbs (parsley or basil)
Instructions
Blend soup: Place tomatoes, cucumber, bell pepper, garlic, onion, and CEREN Spicy Turnip Juice in a blender. Blend until completely smooth.
Season: Add olive oil, vinegar (if needed), salt, and pepper. Blend again until creamy.
Chill: Refrigerate at least 1 hour to let flavors meld. Add ice cubes before serving if desired.
Serve: Pour into bowls, garnish with croutons, diced cucumber, and herbs. Serve cold.
