Spicy Bean Tacos (Mexican-Inspired)
A modern fusion dish using CEREN Boiled Beans as the main filling for quick vegetarian tacos.
Ingredients
- 2 cups CEREN Boiled Beans (slightly mashed)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and black pepper, to taste
- 6 small flour tortillas
Toppings: avocado slices, shredded lettuce, salsa, sour cream
Instructions
Prepare filling: Heat olive oil in a skillet. Sauté onion and garlic until soft. Add beans, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes, mashing beans slightly for texture.
Warm tortillas: Heat tortillas in a dry pan until pliable.
Assemble tacos: Spoon bean mixture into tortillas. Add avocado, lettuce, salsa, and sour cream.
Serve: Enjoy immediately as a quick and flavorful dinner.
