Spanish Cracked Olive & Chorizo Stew
Inspiration: Spanish cuisine embraces olives in stews, pairing them with smoky paprika and cured meats for bold flavors.
Ingredients
- 200 g chorizo sausage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon CEREN Tomato Paste
- 1 teaspoon smoked paprika
- 1 can chopped tomatoes (400 g)
- ½ cup CEREN Cracked Green Olives
- 1 cup cooked chickpeas (CEREN Canned Chickpeas)
- 2 cups chicken stock
- Olive oil, salt & pepper
Instructions
Sauté base: In olive oil, cook onion and garlic until soft. Add chorizo and fry until it releases oils.
Build sauce: Stir in tomato paste, paprika, and canned tomatoes. Simmer 10 minutes.
Add olives & chickpeas: Stir in CEREN Cracked Green Olives, chickpeas, and stock. Simmer 20 minutes until flavors meld.
Serve: With rustic bread or Spanish rice.
