Sefer Kitel Bulgur Soup with Vegetables
A wholesome and rustic soup prepared with CEREN Sefer Kitel Bulgur, vegetables, and aromatic spices.
Ingredients
- 1 cup CEREN Sefer Kitel Bulgur
- 1 onion, chopped
- 1 carrot, diced
- 1 zucchini, diced
- 2 tablespoons CEREN Tomato Paste
- 3 tablespoons olive oil
- 6 cups vegetable broth or water
- 1 teaspoon cumin
- ½ teaspoon paprika
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
Sauté the base: Heat olive oil in a large pot. Add onion and carrot, cook 5 minutes. Add zucchini and stir.
Add tomato paste and spices: Stir in CEREN Tomato Paste, cumin, and paprika. Cook for 2 minutes.
Add bulgur and simmer: Add CEREN Sefer Kitel Bulgur and broth. Season with salt and pepper. Simmer on low for 25–30 minutes until bulgur is tender.
Serve: Garnish with parsley and serve hot with lemon wedges.
