Sefer Kitel Bulgur Pilaf with Vegetables
A wholesome and traditional dish prepared with CEREN Sefer Kitel Bulgur, fresh vegetables, and aromatic spices. Perfect as a main or a side dish.
Ingredients
- 1 ½ cups CEREN Sefer Kitel Bulgur
- 1 medium onion, finely chopped
- 1 green pepper, chopped
- 1 red bell pepper, chopped
- 1 medium carrot, diced
- 1 medium tomato, peeled and diced
- 1 tablespoon CEREN Tomato Paste
- 3 tablespoons olive oil
- 3 cups hot vegetable broth or water
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- ½ teaspoon cumin
- Fresh parsley for garnish
Instructions
Prepare the bulgur: Rinse CEREN Sefer Kitel Bulgur under cold water and drain well. Set aside.
Cook the base: Heat olive oil in a wide, heavy-bottomed pot over medium heat. Add the chopped onion and sauté until golden and fragrant, about 3–4 minutes. Stir in the green pepper, red pepper, and carrot. Continue cooking for another 5 minutes, stirring occasionally until the vegetables soften.
Add tomato and paste: Incorporate the diced tomato and CEREN Tomato Paste. Stir well and cook for 2–3 minutes until the tomato releases its juices and the paste deepens in color.
Toast the bulgur: Add the rinsed bulgur to the pot. Stir continuously for 2 minutes so the grains are lightly toasted and coated with the vegetable mixture. This step enhances the nutty flavor of the bulgur.
Cook the pilaf: Pour in hot vegetable broth (or water). Season with salt, black pepper, and cumin. Mix once, then cover with a tight-fitting lid. Reduce the heat to low and simmer gently for 18–20 minutes, until the liquid is absorbed and the bulgur is tender.
Rest and serve: Once cooked, remove the pot from heat and let the pi
