Red Lentil Meatballs
A vegan-friendly Turkish snack made with CEREN Red Lentils, fine bulgur, and spices. Served cold with lettuce.
Ingredients
- 1 cup CEREN Red Lentils, rinsed
- ½ cup CEREN Çiğ Köftelik Bulgur
- 1 onion, finely chopped
- 2 tablespoons CEREN Tomato Paste
- 3 tablespoons olive oil
- 3 cups water
- 1 teaspoon cumin
- ½ teaspoon chili flakes
- Salt and black pepper, to taste
- ½ bunch parsley, chopped
- 3–4 green onions, chopped
- Lettuce leaves (to serve)
Instructions
Cook lentils: In a pot, combine red lentils and 3 cups water. Simmer for 20 minutes until soft and mushy.
Add bulgur: Remove from heat, stir in CEREN Çiğ Köftelik Bulgur, cover, and let rest for 15 minutes.
Prepare the onion base: Heat olive oil in a pan, sauté onion until golden, then stir in CEREN Tomato Paste. Add cumin, chili flakes, salt, and pepper.
Mix the dough: Combine onion mixture with the lentil-bulgur mixture. Knead well until cohesive. Add parsley and green onions.
Shape: With damp hands, shape into oblong patties.
Serve: Arrange on lettuce leaves and serve cold with lemon wedges.
