Red Lentil and Vegetable Stew
A wholesome stew made with CEREN Red Lentils, vegetables, and aromatic spices. Perfect as a vegetarian main dish.
Ingredients
- 1 cup CEREN Red Lentils, rinsed
- 1 onion, chopped
- 1 carrot, diced
- 1 zucchini, diced
- 2 tomatoes, chopped
- 2 tablespoons CEREN Tomato Paste
- 3 tablespoons olive oil
- 5 cups vegetable broth or water
- 1 teaspoon turmeric
- ½ teaspoon cumin
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
Cook the base: Heat olive oil in a pot. Add onion, carrot, and zucchini. Sauté for 5 minutes until slightly softened.
Add tomato paste and spices: Stir in CEREN Tomato Paste, turmeric, and cumin. Cook for 2 minutes.
Simmer with lentils: Add tomatoes and CEREN Red Lentils, then pour in broth. Bring to a boil, reduce heat, and simmer for 25–30 minutes until lentils and vegetables are tender.
Season and serve: Adjust seasoning with salt and pepper. Garnish with fresh parsley and serve with bread or rice.
