Pasta with Sun-Dried Tomatoes and Garlic
A simple yet rich pasta dish made with CEREN Sun-Dried Tomatoes, garlic, and olive oil. A Mediterranean classic bursting with flavor.
Ingredients
- 300 g spaghetti (or pasta of choice)
- ½ cup CEREN Sun-Dried Tomatoes, thinly sliced
- 3 tablespoons olive oil (or oil from the sun-dried tomato jar)
- 3 cloves garlic, thinly sliced
- ½ teaspoon red pepper flakes (optional, for heat)
- ½ teaspoon black pepper
- Salt, to taste
- ½ cup grated Parmesan cheese (optional)
- Fresh basil leaves for garnish
Instructions
Cook the pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
Prepare the sauce base: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the sliced garlic and sauté gently for 1–2 minutes until fragrant, being careful not to burn it.
Add the tomatoes: Stir in the sliced CEREN Sun-Dried Tomatoes and cook for another 2–3 minutes so they release their flavor into the oil. If you like it spicy, add red pepper flakes at this stage.
Combine with pasta: Add the drained pasta directly into the skillet. Toss well to coat the noodles with the tomato-garlic oil. If the pasta feels dry, add a splash of the reserved pasta water until it reaches a silky consistency.
Season and finish: Sprinkle with black pepper and adjust salt to taste. Remove from heat and toss in fresh basil leaves.
Serve: Plate the pasta, top with grated Parmesan if desired, and garnish with extra sun-dried tomato slices or basil. Serve immediately.
