Midyat Bulgur Salad with Pomegranate
A refreshing Middle Eastern-inspired salad made with CEREN Midyat Bulgur, fresh herbs, and pomegranate.
Ingredients
- 1 cup CEREN Midyat Bulgur
- 2 cups hot water
- 1 cucumber, diced
- 2 medium tomatoes, diced
- ½ red onion, finely chopped
- ½ bunch parsley, chopped
- ½ bunch mint, chopped
- ½ cup pomegranate seeds
- Juice of 1 lemon
- 3 tablespoons olive oil
- 1 tablespoon pomegranate molasses
- Salt and black pepper, to taste
Instructions
Soften bulgur: Place CEREN Midyat Bulgur in a bowl, pour hot water over it, cover, and let soak for 20 minutes. Drain excess water if needed.
Prepare vegetables: Dice cucumber, tomatoes, onion, and chop parsley and mint.
Mix salad: Combine softened bulgur, vegetables, and pomegranate seeds.
Prepare dressing: Whisk lemon juice, olive oil, pomegranate molasses, salt, and pepper.
Serve: Pour dressing over salad, mix gently, and serve chilled.
