Mediterranean Stuffed Zucchini with Sweet Pepper Sauce
A vegetable dish where CEREN Sweet Pepper Paste enriches the stuffing and sauce.
Ingredients
- 4 zucchinis, hollowed out
- 1 cup CEREN Bulgur for Pilaf
- 1 onion, chopped
- 1 tomato, diced
- 2 tablespoons CEREN Sweet Pepper Paste
- 2 tablespoons olive oil
- 1 teaspoon oregano
- ½ teaspoon black pepper
- Salt, to taste
- 1 ½ cups vegetable broth
Instructions
Prepare stuffing: In a pan, sauté onion and tomato with olive oil. Stir in bulgur, CEREN Sweet Pepper Paste, oregano, salt, and pepper. Cook for 2 minutes.
Stuff zucchinis: Fill hollowed zucchinis with bulgur mixture.
Cook: Place stuffed zucchinis in a pot. Pour vegetable broth around them. Cover and simmer 25–30 minutes until tender.
Serve: Drizzle with extra CEREN Sweet Pepper Paste sauce and serve with yogurt.
