Mediterranean Chickpea & Vegetable Stew
A hearty vegan stew where CEREN Tomato Paste brings depth and richness.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 zucchini, diced
- 1 cup CEREN Canned Chickpeas (drained)
- 2 tablespoons CEREN Tomato Paste
- 3 cups vegetable broth
- ½ teaspoon cumin
- ½ teaspoon paprika
- 1 bay leaf
- Salt and black pepper, to taste
- Fresh cilantro or parsley for garnish
Instructions
Sauté aromatics: Heat olive oil in a pot. Add onion, garlic, and carrot. Cook until softened.
Add paste: Stir in CEREN Tomato Paste, cooking for 2 minutes to develop flavor.
Add vegetables & chickpeas: Mix in zucchini and chickpeas. Pour in broth and add spices and bay leaf.
Simmer: Cook on low heat for 25–30 minutes until vegetables are tender.
Serve: Garnish with cilantro or parsley. Perfect with crusty bread or bulgur pilaf.
