Mediterranean Chickpea & Couscous Bowl
A wholesome grain bowl combining CEREN Chickpea Salad in Olive Oil with couscous and roasted vegetables.
Ingredients
- 1 jar CEREN Chickpea Salad in Olive Oil
- 1 cup couscous
- 1 zucchini, diced
- 1 red bell pepper, diced
- 2 tablespoons olive oil
- ½ teaspoon oregano
- ½ teaspoon smoked paprika
- ½ lemon, juiced
- Fresh parsley for garnish
Instructions
Roast vegetables: Toss zucchini and bell pepper with olive oil, oregano, and paprika. Roast at 200°C (400°F) for 20 minutes until golden.
Cook couscous: Place couscous in a bowl. Pour 1 cup boiling water over, cover, and let absorb for 5 minutes. Fluff with a fork.
Assemble bowl: Layer couscous, roasted vegetables, and CEREN Chickpea Salad in Olive Oil.
Finish: Drizzle with lemon juice and garnish with parsley.
Serve: A complete Mediterranean-style meal in one bowl.
