Italian Sun-Dried Tomato Pesto (Pesto Rosso)
A Sicilian-style pasta sauce made with CEREN Sun-Dried Tomatoes, basil, and Parmesan.
Ingredients
- 1 cup CEREN Sun-Dried Tomatoes
- ½ cup fresh basil leaves
- ½ cup grated Parmesan cheese
- ¼ cup pine nuts (or walnuts)
- 2 cloves garlic
- ½ cup olive oil
- Salt and black pepper, to taste
- 300 g pasta (spaghetti, penne, or fusilli)
Instructions
Make pesto: In a blender, combine CEREN Sun-Dried Tomatoes, basil, Parmesan, nuts, and garlic. Slowly drizzle in olive oil while blending until smooth.
Cook pasta: Boil pasta in salted water until al dente. Reserve ½ cup cooking water.
Toss: Mix pasta with sun-dried tomato pesto, adding a splash of cooking water for creaminess.
Serve: Garnish with extra Parmesan and fresh basil.
