Italian Roasted Red Pepper Pasta Sauce
A creamy pasta sauce using CEREN Roasted Red Peppers, garlic, and Parmesan cheese.
Ingredients
- 2 cups CEREN Roasted Red Peppers, chopped
- 2 cloves garlic
- 2 tablespoons olive oil
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 300 g penne or spaghetti
- ½ teaspoon chili flakes (optional)
- Salt and black pepper, to taste
- Fresh basil for garnish
Instructions
Cook pasta: Boil pasta until al dente. Reserve ½ cup cooking water.
Prepare sauce: In a blender, combine CEREN Roasted Red Peppers, garlic, and olive oil. Blend until smooth.
Simmer: Pour mixture into a pan. Stir in cream and Parmesan. Simmer for 5 minutes. Season with salt, pepper, and chili flakes.
Toss pasta: Add cooked pasta to the sauce. Use reserved pasta water if needed to loosen.
Serve: Garnish with fresh basil and extra Parmesan.
