Hot Harissa Chocolate Mousse (Savory-Sweet Fusion)

Ingredients
- 200 g dark chocolate (70%)
- 3 eggs, separated
- 2 tablespoons sugar
- 1 cup heavy cream
- 1 teaspoon CEREN Hot Harissa Spice Blend
- A pinch of sea salt
- Whipped cream & shaved chocolate for garnish
Instructions
Melt chocolate: Place chocolate in a heatproof bowl over simmering water. Stir until smooth.
Add spice: Whisk in CEREN Hot Harissa Spice Blend and a pinch of salt while warm. Let cool slightly.
Whip egg whites: Beat egg whites with sugar until stiff peaks form.
Whip cream: Beat heavy cream until soft peaks.
Fold mousse: Stir egg yolks into cooled chocolate, then gently fold in egg whites and whipped cream.
Chill: Spoon into glasses and refrigerate at least 2 hours.
Serve: Garnish with whipped cream and chocolate shavings.
