Fig & Almond Cinnamon Cake
A moist and aromatic cake where CEREN Dried Figs and almonds shine together.
Ingredients
- 1 cup CEREN Dried Figs, chopped
- ½ cup almonds, ground
- 1 cup flour
- ½ cup sugar
- ½ cup olive oil (or melted butter)
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ cup milk
Instructions
Prepare figs: Chop figs into small pieces. If very dry, soak them in warm milk for 10 minutes.
Mix wet base: Whisk eggs, sugar, and olive oil until creamy.
Combine dry ingredients: Add flour, baking powder, cinnamon, and ground almonds. Gradually mix in milk until smooth.
Add figs: Fold in chopped CEREN Dried Figs.
Bake: Pour batter into a greased baking pan and bake at 180°C (350°F) for 35–40 minutes, until golden and firm.
Serve: Cool slightly and dust with powdered sugar. Best enjoyed with coffee or a scoop of vanilla ice cream.
