Çiğ Köftelik Bulgur
A refreshing Mediterranean salad made with CEREN Çiğ Köftelik Bulgur, herbs, and a tangy dressing.
Ingredients
- 1 cup CEREN Çiğ Köftelik Bulgur
- 1 ½ cups hot water
- 2 medium tomatoes, diced
- 1 cucumber, diced
- ½ red onion, finely chopped
- ½ bunch parsley, finely chopped
- ½ bunch mint, finely chopped
- Juice of 2 lemons
- 3 tablespoons olive oil
- Salt and black pepper, to taste
Instructions
Soften the bulgur: Place CEREN Çiğ Köftelik Bulgur in a bowl. Pour hot water over it, cover, and let sit for 10–15 minutes until softened. Fluff with a fork.
Chop the vegetables: Dice tomatoes, cucumber, onion, parsley, and mint.
Make the dressing: In a small bowl, whisk lemon juice, olive oil, salt, and pepper.
Combine: Mix softened bulgur with vegetables and herbs. Pour dressing over and toss gently. Chill for 20 minutes before serving.
