Bulgur Pilaf with Vegetables
A colorful and hearty side dish made with CEREN Bulgur, fresh vegetables, and tomato paste. A Turkish classic that pairs perfectly with grilled meat or yogurt.
Ingredients
- 1 ½ cups CEREN Bulgur (medium grain)
- 1 onion, finely chopped
- 1 green pepper, chopped
- 1 medium carrot, diced
- 1 medium tomato, diced
- 1 tablespoon CEREN Tomato Paste
- 3 tablespoons olive oil
- 3 cups hot vegetable broth or water
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- ½ teaspoon cumin
Instructions
Prepare the base: Heat olive oil in a wide pot over medium heat. Add onion and sauté until golden. Stir in chopped green pepper and carrot. Cook for 4–5 minutes until vegetables soften.
Add tomato and paste: Mix in diced tomato and CEREN Tomato Paste. Cook for 2–3 minutes, stirring occasionally.
Toast the bulgur: Add CEREN Bulgur and stir for 1–2 minutes so the grains absorb flavor.
Simmer: Pour in hot broth or water. Season with salt, pepper, and cumin. Stir once, cover, and simmer over low heat for 18–20 minutes until liquid is absorbed.
Rest and serve: Remove from heat, cover, and let rest for 10 minutes. Fluff with a fork before serving.
