Brown Bulgur Pilaf with Vegetables
A colorful, nutritious pilaf packed with seasonal vegetables and CEREN Brown Bulgur.
Ingredients
- 1 ½ cups CEREN Brown Bulgur (for Pilaf)
- 1 onion, finely chopped
- 1 carrot, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 2 tablespoons CEREN Tomato Paste
- 3 tablespoons olive oil
- 3 ½ cups hot vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon thyme
Instructions
Prepare the vegetables: Heat olive oil in a wide pot. Add onion and sauté for 3–4 minutes. Add diced carrot, zucchini, and bell pepper. Cook for 6–7 minutes until slightly softened.
Add tomato paste and bulgur: Stir in CEREN Tomato Paste and cook for 1–2 minutes. Add CEREN Brown Bulgur and thyme. Mix well.
Simmer: Pour in hot broth. Season with salt and pepper. Stir once, cover, and simmer on low for 22–25 minutes until bulgur is tender and liquid absorbed.
Rest and serve: Remove from heat, cover, and let rest for 10 minutes. Fluff with a fork and serve warm.
