Brown Bulgur Meatballs (with Yogurt Sauce)
A comforting dish of CEREN Esmer Köftelik Bulgur balls served with garlic yogurt and spiced butter sauce.
Ingredients
For the bulgur balls:
- 1 ½ cups CEREN Esmer Köftelik Bulgur
- ½ cup hot water
- 1 small onion, grated
- 1 egg
- 3 tablespoons flour
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon black pepper
For the sauce:
- 2 cups thick yogurt
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon paprika
- 1 teaspoon dried mint
Instructions
Prepare the bulgur dough: Place CEREN Esmer Köftelik Bulgur in a bowl, pour hot water over it, cover, and let it soften for 10 minutes. Add grated onion, egg, flour, and spices. Knead until smooth.
Shape the köftes: With damp hands, roll into hazelnut-sized balls.
Cook the köftes: Boil salted water in a pot, add köftes, and cook until they float (about 5–6 minutes). Remove with a slotted spoon.
Prepare the yogurt base: Mix yogurt with garlic and a pinch of salt until creamy. Spread on a serving platter.
Make the topping: Melt butter in a small pan, add paprika and dried mint, and sizzle for 30 seconds.
Serve: Place bulgur balls on yogurt, drizzle with spiced butter, and serve warm.
