Ashura Wheat with Yogurt and Garlic
A creamy and refreshing meze made with CEREN Ashura Wheat, tangy yogurt, and garlic. Simple but full of flavor, it pairs wonderfully with grilled meats or bread.
Ingredients
- 1 cup CEREN Ashura Wheat
- 1 ½ cups thick yogurt (preferably strained)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried mint
- Salt, to taste
Instructions
Cook the wheat: Rinse the CEREN Ashura Wheat and boil it in water for 25–30 minutes until tender. Drain and set aside to cool completely. It’s important to let it cool so the yogurt won’t separate later.
Prepare the yogurt mix: In a large bowl, whisk yogurt with minced garlic and salt until creamy and smooth. Taste and adjust the salt according to your preference.
Combine with wheat: Add the cooled wheat to the yogurt mixture and stir until the grains are evenly coated with the creamy garlic yogurt.
Prepare the topping: In a small pan, heat olive oil over low heat. Add dried mint and let it sizzle for a few seconds, being careful not to burn it. This step releases the aroma of the mint.
Finish and serve: Pour the mint-infused oil over the yogurt-wheat mixture. Gently mix or leave as a garnish on top. Serve chilled as a meze or light main dish.
