Ashura Wheat and Vegetable Soup
A hearty and comforting soup prepared with CEREN Ashura Wheat and fresh vegetables. Perfect for cold days or when you crave something light yet filling.
Ingredients
- 1 cup CEREN Ashura Wheat
- 1 onion, finely chopped
- 1 carrot, diced
- 1 potato, diced
- 1 zucchini, diced
- 1 tablespoon CEREN Tomato Paste
- 2 tablespoons olive oil
- 6 cups hot water or vegetable broth
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes (optional)
Instructions
Prepare the wheat: Rinse the CEREN Ashura Wheat well and soak it for at least 2–3 hours or overnight. This step helps the grains cook faster and achieve a softer texture. Drain before using.
Start the base: Heat olive oil in a large pot over medium heat. Add finely chopped onion and sauté for 3–4 minutes until soft and golden. Stir in the CEREN Tomato Paste and cook for another 1–2 minutes to deepen the flavor.
Add the vegetables: Mix in diced carrot, potato, and zucchini. Stir occasionally and cook for about 5 minutes so the vegetables release their aroma.
Cook with wheat: Add the soaked wheat to the pot and stir to combine. Pour in hot water or vegetable broth. Bring the mixture to a boil, then lower the heat and let it simmer gently for 35–40 minutes, stirring occasionally to prevent sticking.
Season and serve: When the wheat and vegetables are tender, season with salt, black pepper, and red pepper flakes if you like it spicy. Serve steaming hot with crusty bread on the side.
