Apricot Harissa Roasted Carrots
A Middle Eastern–inspired side dish with a sweet-spicy glaze.
Ingredients
- 500 g carrots, peeled and halved lengthwise
- 2 tablespoons CEREN Apricot Harissa
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon cumin
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
Prepare carrots: Place carrots on a baking sheet.
Make glaze: In a small bowl, whisk CEREN Apricot Harissa, olive oil, honey, cumin, salt, and pepper.
Coat: Toss carrots with the glaze until well covered.
Roast: Bake at 200°C (400°F) for 25–30 minutes until caramelized and tender.
Serve: Garnish with parsley. Pairs well with roasted meats or as a vegetarian main.
