Mediterranean Roasted Chicken with Pomegranate Vinegar Glaze
Inspiration: Vinegars and fruit-based glazes are common in Mediterranean roasts. Here, CEREN Pomegranate Vinegar creates a shiny, flavorful glaze.
Ingredients
- 1 whole chicken (about 1.5 kg)
- 3 tablespoons CEREN Extra Virgin Olive Oil
- 3 garlic cloves, minced
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
- ½ cup chicken stock
- 3 tablespoons CEREN Pomegranate Vinegar
- 2 tablespoons honey
- Salt & black pepper
Instructions
Season chicken: Rub chicken with olive oil, garlic, rosemary, thyme, salt, and pepper.
Roast: Place in a preheated oven at 190°C (375°F) for 1 hour.
Make glaze: In a saucepan, simmer stock, CEREN Pomegranate Vinegar, and honey until slightly thick.
Glaze chicken: In the last 15 minutes of roasting, brush glaze over chicken every 5 minutes for a shiny finish.
Serve: With roasted vegetables or pilaf.
