Shaved Fennel & Orange Salad with Lemon Vinegar Dressing
A refreshing salad with layered textures — crisp fennel, sweet oranges, and a tangy CEREN Lemon Vinegar vinaigrette.
Ingredients
- 2 fennel bulbs, thinly shaved (reserve fronds for garnish)
- 2 oranges, segmented
- ½ red onion, thinly sliced
- ¼ cup walnuts, toasted
- 50 g feta cheese, crumbled
For the dressing:
- 3 tablespoons CEREN Lemon Vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon honey
- 4 tablespoons olive oil
- Salt and pepper, to taste
Instructions
Prepare salad base: Thinly shave fennel and onion. Arrange with orange segments on a platter. Sprinkle walnuts and feta over the top.
Make vinaigrette: In a small jar, whisk CEREN Lemon Vinegar, mustard, honey, olive oil, salt, and pepper until emulsified.
Dress & toss: Drizzle dressing over salad just before serving. Garnish with fennel fronds.
