Tahini Lemon Grilled Eggplant
A savory side dish where CEREN Tahini turns into a creamy dressing for smoky eggplants.
Ingredients
- 2 large eggplants, sliced lengthwise
- 3 tablespoons olive oil
- Salt & black pepper, to taste
Tahini Sauce:
- 3 tablespoons CEREN Tahini
- 2 tablespoons CEREN Lemon Juice
- 1 clove garlic, minced
- 2 tablespoons water (to thin)
- Pinch of cumin
Instructions
Grill eggplants: Brush slices with olive oil, season with salt & pepper. Grill or roast until tender and charred.
Make sauce: In a bowl, whisk CEREN Tahini, lemon juice, garlic, water, and cumin until creamy.
Assemble: Drizzle sauce over grilled eggplants.
Serve: With fresh parsley and pomegranate seeds for garnish.
