Mild Harissa Roasted Vegetable & Chickpea Bowl
A hearty plant-based dish where CEREN Mild Harissa adds warmth and smokiness without too much spice.
Ingredients
- 2 cups mixed vegetables (zucchini, carrots, bell peppers, eggplant), diced
- 1 can CEREN Canned Chickpeas, drained and rinsed
- 3 tablespoons olive oil
- 2 tablespoons CEREN Mild Harissa
- 1 teaspoon cumin
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1 cup cooked quinoa or bulgur
- Fresh parsley, chopped, for garnish
Instructions
Prep veggies: Place diced vegetables and chickpeas on a baking sheet.
Season: Mix olive oil, CEREN Mild Harissa, cumin, paprika, salt, and pepper. Toss with vegetables.
Roast: Bake at 200°C (400°F) for 25–30 minutes until golden.
Serve: Spoon over quinoa or bulgur, garnish with parsley.
