Harissa-Crusted Salmon with Roasted Vegetable Couscous
A modern restaurant-style dish where CEREN Harissa Spice Blend forms a crust on salmon, paired with couscous.
Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons CEREN Harissa Spice Blend
- 1 teaspoon lemon zest
- 2 cups couscous
- 2 cups vegetable broth
- 1 zucchini, diced
- 1 carrot, diced
- 1 red bell pepper, diced
- 2 tablespoons olive oil
- Salt and black pepper, to taste
Instructions
Prepare salmon crust: Mix CEREN Harissa Spice Blend with olive oil and lemon zest into a paste. Spread over salmon fillets.
Roast vegetables: Toss zucchini, carrot, and bell pepper with olive oil, salt, and pepper. Roast at 200°C (400°F) for 20 minutes.
Cook salmon: Place salmon on a baking tray, bake at 200°C (400°F) for 12–15 minutes until just cooked.
Prepare couscous: Pour hot broth over couscous in a bowl. Cover and let sit 5 minutes, then fluff with a fork. Stir in roasted vegetables.
Serve: Plate couscous, top with harissa-crusted salmon, and garnish with fresh herbs.
