Rose Harissa Glazed Eggplant
A vegetarian dish where CEREN Güllü Harissa creates a sweet-spicy-floral glaze on roasted eggplants.
Ingredients
- 2 medium eggplants, halved lengthwise
- 3 tablespoons olive oil
- 2 tablespoons CEREN Güllü Harissa
- 1 tablespoon honey (or pomegranate molasses)
- 1 clove garlic, minced
- ½ teaspoon cumin
- Salt and pepper, to taste
- Fresh coriander for garnish
Instructions
Prepare eggplants: Score flesh of halved eggplants in a crisscross pattern. Brush with olive oil, season with salt and pepper.
Roast: Bake at 200°C (400°F) for 25–30 minutes until soft.
Make glaze: Mix CEREN Güllü Harissa, honey, garlic, and cumin.
Glaze & finish: Brush roasted eggplants with glaze. Return to oven for 5 minutes until caramelized.
Serve: Garnish with coriander. Delicious as a side or vegetarian main.
