Rose Harissa Couscous Salad
A fragrant, light salad where CEREN Güllü Harissa brings spice and floral depth.
Ingredients
- 1 cup couscous
- 1 cup boiling vegetable broth
- 2 tablespoons olive oil
- 2 tablespoons CEREN Güllü Harissa
- ½ cup chickpeas (from CEREN Canned Chickpeas)
- ½ cup cherry tomatoes, halved
- ½ cucumber, diced
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh parsley, chopped
- Juice of ½ lemon
- Salt and pepper, to taste
Instructions
Cook couscous: Place couscous in a bowl, pour over hot broth, cover, and let sit 5 minutes. Fluff with a fork.
Flavor base: Mix olive oil, CEREN Güllü Harissa, and lemon juice.
Combine: Toss couscous with chickpeas, tomatoes, cucumber, herbs, and the harissa dressing.
Serve: A refreshing, floral-spicy side dish or light main.
