Italian Sun-Dried Tomato & Olive Pasta
A quick Mediterranean pasta with briny and savory flavors.
Ingredients
- 300 g spaghetti or penne
- ½ cup CEREN Sun-Dried Tomatoes in Oil, sliced
- ¼ cup black olives, sliced
- 2 cloves garlic, minced
- 3 tablespoons olive oil (from the jar of tomatoes)
- ½ teaspoon red pepper flakes
- ½ teaspoon oregano
- ½ cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
Cook pasta: Boil in salted water until al dente. Reserve ½ cup cooking water.
Prepare sauce: In a skillet, heat olive oil from the jar. Add garlic, chili flakes, and oregano. Sauté 1–2 minutes.
Add tomatoes & olives: Stir in CEREN Sun-Dried Tomatoes in Oil and olives.
Toss pasta: Add drained pasta, mix with sauce, and loosen with reserved water if needed.
Serve: Garnish with Parmesan and basil.
