Sun-Dried Tomato & Goat Cheese Stuffed Chicken
A modern fusion main dish where CEREN Sun-Dried Tomatoes are used as a savory stuffing.
Ingredients
- 4 chicken breasts
- 6 CEREN Sun-Dried Tomatoes, chopped
- 100 g goat cheese (or feta)
- 2 tablespoons fresh basil, chopped
- 2 tablespoons olive oil
- ½ teaspoon black pepper
- ½ teaspoon oregano
- Salt, to taste
Instructions
Prepare filling: Mix chopped CEREN Sun-Dried Tomatoes, goat cheese, and basil in a bowl.
Stuff chicken: Cut a pocket into each chicken breast. Stuff with the tomato-cheese mixture. Secure with toothpicks.
Season: Rub outside with olive oil, oregano, salt, and pepper.
Cook: Bake at 190°C (375°F) for 25–30 minutes until chicken is fully cooked.
Serve: Slice and serve with roasted vegetables or salad.
