Mediterranean Kidney Bean & Quinoa Bowl
A colorful and nutrient-rich grain bowl with CEREN Red Kidney Bean Salad as the protein base.
Ingredients
- 1 jar CEREN Red Kidney Bean Salad
- 1 cup quinoa, rinsed and cooked
- 1 zucchini, diced and grilled
- 1 carrot, shredded
- ½ cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Juice of ½ lemon
- Fresh parsley for garnish
Instructions
Cook quinoa: Rinse and cook quinoa in 2 cups water until fluffy.
Prepare vegetables: Grill zucchini with a drizzle of olive oil. Slice tomatoes and shred carrot.
Assemble bowl: Place quinoa in a large bowl. Arrange zucchini, carrot, tomatoes, and CEREN Red Kidney Bean Salad on top.
Dress: Drizzle with olive oil and lemon juice. Garnish with parsley.
