Latin American Red Bean & Rice Bowl
A classic pairing of red beans and rice, inspired by Caribbean and Latin flavors.
Ingredients
- 2 cups CEREN Boiled Red Beans
- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- ½ teaspoon chili powder
- 3 cups chicken or vegetable broth
- Salt and black pepper, to taste
- Fresh coriander and lime wedges for garnish
Instructions
Cook aromatics: Heat olive oil in a pot. Sauté onion, garlic, and red bell pepper until softened.
Add spices: Stir in cumin and chili powder, cooking for 1 minute.
Simmer rice: Add rice and broth. Cover and cook until rice is nearly done.
Add beans: Stir in CEREN Boiled Red Beans, season with salt and pepper. Simmer for another 5 minutes.
Serve: Garnish with coriander and lime. Serve as a main dish or side.
