Greek Bean & Feta Salad
A refreshing Mediterranean salad using CEREN Boiled Beans, olives, and feta cheese.
Ingredients
- 2 cups CEREN Boiled Beans
- ½ cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- ½ cup black olives, pitted
- ½ cup feta cheese, crumbled
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Instructions
Prepare vegetables: Dice cucumber, halve tomatoes, and slice onion thinly.
Combine: In a large bowl, mix CEREN Boiled Beans, vegetables, olives, and feta cheese.
Dress: Whisk olive oil, lemon juice, oregano, salt, and pepper. Pour over salad.
Serve: Toss gently and serve chilled as a light main or side dish.
