Creamy Pea & Mint Soup (British Style)
A smooth, refreshing soup using CEREN Boiled Peas, fresh mint, and cream.
Ingredients
- 2 cups CEREN Boiled Peas
- 1 onion, chopped
- 2 tablespoons butter
- 3 cups vegetable broth
- ½ cup cream or milk
- 1 handful fresh mint leaves
- Salt and black pepper, to taste
- Lemon wedges (optional)
Instructions
Cook aromatics: Melt butter in a pot. Sauté onion until soft.
Add peas & broth: Stir in CEREN Boiled Peas and vegetable broth. Simmer 10 minutes.
Blend: Transfer mixture to a blender, add mint leaves, and blend until smooth. Return to pot.
Finish: Stir in cream, adjust salt and pepper. Heat gently without boiling.
Serve: Garnish with extra mint or a squeeze of lemon juice. Serve with crusty bread.
