Mediterranean Chickpea & Spinach Stew
A wholesome one-pot dish from Mediterranean tradition with CEREN Canned Chickpeas, spinach, and spices.
Ingredients
- 2 cups CEREN Canned Chickpeas (drained and rinsed)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons CEREN Tomato Paste
- 2 cups fresh spinach
- 2 tablespoons olive oil
- ½ teaspoon cumin
- ½ teaspoon paprika
- 3 cups vegetable broth
- Salt and black pepper, to taste
- Lemon wedges for serving
Instructions
Sauté base: Heat olive oil in a pot. Add onion and garlic, cook until fragrant.
Add flavor: Stir in CEREN Tomato Paste, cumin, and paprika. Cook for 2 minutes.
Simmer: Add chickpeas and broth. Simmer for 20 minutes until flavors combine.
Add spinach: Stir in spinach just before serving, allowing it to wilt.
Serve: Garnish with lemon wedges and serve with bulgur or crusty bread.
