Brazilian Feijoada (Black Bean & Meat Stew, with Bean Twist)
Brazil’s national dish, normally made with black beans, can be adapted with CEREN Canned Beans for a lighter yet equally satisfying version.
Ingredients
- 2 cups CEREN Canned Beans (drained and rinsed)
- 250 g beef stew meat, cubed
- 150 g sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 bay leaves
- 1 teaspoon smoked paprika
- 3 cups beef broth
- Orange slices and cooked rice for serving
Instructions
Brown meat: In a heavy pot, heat olive oil. Brown beef cubes and sausage until golden. Remove and set aside.
Cook base: In the same pot, sauté onion and garlic. Add smoked paprika and bay leaves.
Simmer stew: Return meat to pot, add broth, and simmer 45 minutes until beef is tender.
Add beans: Stir in CEREN Canned Beans. Simmer 10 more minutes to meld flavors.
Serve: Traditionally served with rice, collard greens, and fresh orange slices to cut richness.
