Mediterranean Black Bean Salad with Feta
A refreshing and protein-rich salad made with CEREN Black Beans, vegetables, and cheese.
Ingredients
- 2 cups CEREN Black Beans (cooked or canned)
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Instructions
Prepare vegetables: Dice cucumber, halve tomatoes, and slice onion thinly.
Combine: In a large bowl, mix CEREN Black Beans, vegetables, parsley, and feta cheese.
Make dressing: Whisk olive oil, lemon juice, oregano, salt, and pepper.
Assemble: Pour dressing over salad, toss gently, and chill for 30 minutes before serving.
Serve: Great as a side dish or light main course.
