Bean & Quinoa Power Bowl
A healthy and colorful grain bowl combining CEREN Bean Salad in Olive Oil with quinoa and vegetables.
Ingredients
- 1 jar CEREN Bean Salad in Olive Oil
- 1 cup quinoa, rinsed and cooked
- 1 cucumber, diced
- 1 carrot, shredded
- ½ cup cherry tomatoes, halved
- 2 tablespoons tahini
- Juice of ½ lemon
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
Cook quinoa: Rinse quinoa, then simmer in 2 cups water for 15 minutes until fluffy. Let cool slightly.
Assemble bowl: Place quinoa in a large bowl as the base.
Add toppings: Arrange cucumber, carrot, tomatoes, and CEREN Bean Salad in Olive Oil on top.
Make dressing: Whisk tahini, lemon juice, olive oil, salt, and pepper. Drizzle over the bowl.
Serve: Enjoy as a balanced, protein-rich meal.
