Moist Olive Cake with Canola Oil
A Mediterranean-inspired savory cake made with CEREN Canola Oil, black olives, and herbs.
Ingredients
- 3 eggs
- ½ cup CEREN Canola Oil
- ½ cup milk
- 1 ½ cups flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup black olives, sliced
- ½ cup feta cheese, crumbled
- 2 tablespoons fresh dill or parsley, chopped
Instructions
Prepare wet mix: In a large bowl, whisk eggs, milk, and CEREN Canola Oil until smooth.
Add dry ingredients: Sift in flour, baking powder, salt, and pepper. Mix gently until combined.
Add fillings: Fold in olives, feta, and herbs. Batter should be thick but pourable.
Bake: Transfer into a greased loaf pan. Bake at 180°C (350°F) for 35–40 minutes until golden and a toothpick comes out clean.
Serve: Cool slightly, slice, and serve as a savory snack or breakfast item.
