Bulgur and Herb Köfte (Vegetarian)
A light, vegetarian version of köfte made with CEREN Bulgur for Meatballs, fresh herbs, and spices. Perfect with yogurt.
Ingredients
- 1 cup CEREN Bulgur for Meatballs
- 1 ½ cups hot water
- 1 onion, finely chopped
- 1 potato, boiled and mashed
- ½ bunch parsley, chopped
- ½ bunch dill, chopped
- 1 egg
- ½ cup breadcrumbs
- 1 teaspoon cumin
- Salt and black pepper
- Olive oil for frying
Instructions
Soften the bulgur: Place CEREN Bulgur for Meatballs in a bowl. Pour hot water over, cover, and let sit for 15 minutes. Fluff with a fork.
Prepare the mixture: Add onion, mashed potato, parsley, dill, egg, breadcrumbs, and spices. Mix well until it holds together.
Shape the patties: Form into flat oval patties.
Cook: Fry in olive oil over medium heat until golden on both sides (about 3–4 minutes each side).
Serve: Serve hot with garlic yogurt or a fresh salad.
