Brown Bulgur Pilaf with Chickpeas
A protein-rich pilaf combining CEREN Brown Bulgur with chickpeas — hearty enough for a main dish.
Ingredients
- 1 ½ cups CEREN Brown Bulgur (for Pilaf)
- 1 cup CEREN Canned Chickpeas, drained and rinsed
- 1 onion, finely chopped
- 2 tablespoons CEREN Tomato Paste
- 3 tablespoons olive oil
- 3 cups hot vegetable or chicken broth
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
Cook the onion: Heat olive oil in a pot and sauté onion until soft. Add CEREN Tomato Paste and cook for 2 minutes.
Add bulgur and spices: Stir in CEREN Brown Bulgur, cumin, salt, and black pepper. Mix well and toast lightly.
Simmer with chickpeas: Add broth and chickpeas. Stir once, cover, and simmer for 20 minutes on low heat until pilaf is fluffy and liquid is absorbed.
Rest and serve: Let rest for 10 minutes before serving. Serve warm with yogurt or salad.
