Grilled Chicken with Lemon and Herbs
A light and flavorful main dish prepared with CEREN Canola Oil, fresh herbs, and zesty lemon. Perfect for a healthy lunch or dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 3 tablespoons CEREN Canola Oil
- Juice and zest of 1 lemon
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- ½ teaspoon thyme
- Salt, to taste
- Black pepper, to taste
Instructions
Prepare the marinade: In a medium bowl, combine CEREN Canola Oil, lemon juice and zest, minced garlic, parsley, oregano, thyme, salt, and black pepper. Whisk until all ingredients are well blended.
Marinate the chicken: Place chicken breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, making sure each piece is coated evenly. Seal the bag (or cover the dish) and refrigerate for at least 30 minutes, preferably 2 hours for maximum flavor.
Preheat the grill: Heat your grill or grill pan to medium-high. Lightly brush the grates with a bit of CEREN Canola Oil to prevent sticking.
Grill the chicken: Remove chicken from the marinade and let excess drip off. Place on the hot grill and cook for about 5–6 minutes per side, depending on thickness, until the chicken reaches an internal temperature of 75°C (165°F).
Rest and serve: Transfer the grilled chicken to a plate and let it rest for 5 minutes to retain its juices. Garnish with extra parsley and lemon slices. Serve with grilled vegetables or a fresh salad on the side.
